Frugal Friday - Potato Bake

Having recently found a couple of dented can of soup at the Coles skip bin and a heap of potatoes, I can recommend the following recipe.

Potato Bake


1 can chicken soup

Cup of milk (not too far past the use by date)

Cup of shredded cheese (or something vaguely yellow)

Tablespoon butter (or a bit more of the vaguely yellow stuff)

Pepper to taste

6 potatoes


In 30cm x 20cm dish mix soup, milk, butter and half of cheese. Peel potatoes and slice. Put into mix as you slice so they don’t go brown. Put rest of cheese on top. Put in moderate oven for 1-1.25 hours.

Enjoy

You can also put some diced bacon in if you want to splurge!

Frugal Friday: Vegetable and Barley Soup

I know it is not winter anymore, but there is still money to be saved by limiting your diet.

If you have a few vegetables that are on their way out, then this is a cost effective way to dispose of them and feed the kids at the same time.

Ingredients:
- 5 or 6 large potatoes, peeled and cubed, most diseased bits removed
- 2 leeks cut into round slices
- 3 carrots, roughly chopped
- 5 celery sticks, cut onto chunks, substitute with green carrots if cheaper
- 1 cup of dried pearl barley
- a few leaves of dark green cabbage, or anything vaguely green
- lot of water to stretch it out
- Salt and pepper to taste

Boil it up and dish it out.
