Frugal Friday - Mashed Potato Fudge

Here's a good one to use up left over mashed potatoes.

Mashed potato fudge

Ingredients:

3 tablespoons lard
3 tablespoons butter
1/2 cup plus 1 tablespoon cocoa
1/3 cup mashed potatoes
pinch of salt
1 teaspoon vanilla
500g icing sugar
1/2 cup chopped nuts (if can be borrowed from next door neighbour)

Directions:

In a microwave safe bowl, melt lard and butter in the microwave. Stir in cocoa until smooth. Add potatoes, salt and vanilla. Mix well. Blend in icing sugar, mix and add nuts. Dough will be very lumpy. Knead until smooth. Press into a buttered tray. Cool in the refrigerator before cutting. Makes 64 pieces.

If you don't have any mashed potatoes, use peas. It will be disgusting but at least you won't have to spend money on potatoes.
